Nasi tumpang populer di beberapa daerah di Jawa Tengah dan Jawa Timur, mulai dari Solo, Sragen, Klaten, Kediri, dan Nganjuk. Di DIY, nasi tumpang tak terlalu populer. Tak banyak penjualnya.



Salah satunya di warung makan ”Gandhok Solo” di Jalan Raya Tajem-Ngemplak, Sleman, tepatnya beberapa ratus meter utara Pasar Tajem. Sesuai namanya, warung makan kecil di antara sawah itu menjual berbagai masakan khas Solo.

Sepintas, nasi tumpang mirip nasi pecel. Bedanya, sayuran rebus pada nasi tumpang disiram kuah berbahan dasar santan dan tempe busuk. Di ”Gandhok Solo”, rasa kuah cenderung gurih dan diramu bumbu kencur, serai, daun salam, daun jeruk, bawang merah, dan bawang putih.

Ditambah lauk rempeyek rebon (udang kecil yang kering) dan telur mata sapi, membuat nasi tumpang hangat di Gandhok Solo makin sedap.

Asli Solo

Pemilik ”Gandhok Solo”, Ch Heny Triharwati (40), mengatakan, nasi tumpang buatannya mempertahankan versi asli Solo: rasa cenderung gurih plus kulit sapi (krecek) dan tahu. Ini beda dengan masakan lain yang menjadi manis saat ada di Yogya.

Masakan dipertahankan gurih agar nasi tumpang itu menjadi obat rindu bagi orang-orang Jawa Tengah yang kebetulan tengah berada di Yogya. ”Banyak orang asal Klaten, Solo, dan Sragen datang ke sini. Mereka bilang rasanya pas,” kata Heny, yang berasal dari Tawangsari, Sukoharjo, Surakarta, Jateng.

Heny memasak sambal tumpang dua hari sekali. Sekali memasak, ia butuh 25 kg tempe, campuran antara tempe biasa dan busuk. Khusus tempe busuk, perempuan dua putra itu membusukkan sendiri di rumahnya untuk menghasilkan rasa sempurna. ”Biasanya tempe umur 4-5 hari yang paling enak digunakan. Kalau tidak pas, rasanya pahit. Kalau beli sudah busuk sering kali rasanya pahit dan aroma tidak enak,” katanya.

Nasi tumpang di warung itu laku 10-15 porsi dalam sehari. Memang, nasi tumpang bukan masakan paling favorit di warung itu. Nasi timlo lebih laku, 20-30 porsi seharinya. Namun, setiap hari ada saja orang yang menanyakan masakan semangit itu.

Selain kedua masakan itu, Gandhok Solo mempunyai menu es dawet dan cao. Kedua minuman itu segar dan legit karena tetes tebu sebagai pemanis. ”Tetes tebu khusus saya datangkan dari Solo. Di Yogyakarta tidak ada yang jual,” kata Heny.

Saat erupsi Merapi, warung yang berjarak 22 km dari puncak Merapi itu tutup dua pekan. Selain ditinggal mengungsi, warung itu jadi tempat pengungsian. Baru dua hari ini kembali dibuka.Usai Merapi reda, nasi tumpang segera mengobati kerinduan.
